Finca Hato Viejo is a family-owned farm, administered on a daily basis by Martha Luz Camelo. Martha Luz is in charge of managing the day-to-day operations of the farm, including the processing of all the coffees. At 2,000 meters, the elevation is in-line with many in the region. What makes this farm unique is the sub-region within Nariño: located approximately 30 minutes from the capital, Pasto, but in an area not historically known for producing coffees. In total, the farm is 21 hectares, with approximately 7 planted in coffee. Of those 7, four are of the Caturra variety, two of the Castillo variety and a one of Catimor. This lot is  100% Caturra and is the result of some very basic changes in the processing. Tusa Specialty (our relationship manager with this coffee) first met Martha Luz two years ago at ExpoEspeciales, the main coffee trade show in Colombia held each year and the coffee was absolutely delicious. Martha Luz  experimented with a dry ferment, and the same number of hours she was fermenting during the 2015 harvest (44-48 hours). The results were absolutely delicious. Fruit forward, complex, tropical fruit jam notes without losing any sense of clarity or crispness in the profile. She only produced the four bags Máquina is proud to be selling on our website.
